Method
Nigiri & Sashimi - Rice Preparation
Rinse and cook rice
Place 2 cups short-grain sushi rice in a fine-mesh sieve and rinse under cold running water, rubbing the grains with your fingers, until the water runs clear (about 3–4 minutes). Drain 10–15 minutes. Transfer rice to a rice cooker or heavy pot and add 2.2 cups water. If using a pot, cover, bring to a gentle boil over medium heat, then reduce to low and cook 12–14 minutes until water is absorbed. Remove from heat and let steam, covered, 10 minutes.
Season rice
While the rice cooks, combine 3 tbs rice vinegar, 1.5 tbs sugar and 1 tsp fine sea salt in a small bowl; warm 10–15 seconds in the microwave or gently over low heat, stirring until sugar and salt dissolve. Transfer cooked rice to a large wooden or nonreactive bowl. Gently fold in the vinegar mixture with a rice paddle or wooden spoon using cutting and fanning motions to separate grains and cool the rice to body temperature (about 5–7 minutes). Cover rice with a damp towel to keep it from drying out.

Portion and chill
Keep the chutoro chilled until ready to slice. Using a very sharp sashimi or chef's knife, trim any silver skin or ragged edges. Pat dry with paper towel.
Slice the chutoro
Cut the chutoro into 18–20 slices appropriate for nigiri: each slice about 2.5–3.5 cm (1–1.4 in) wide, 6–7 cm (2.5–2.75 in) long and 5–7 mm thick. Hold the knife at an angle (about 30°) and use a single smooth pull stroke away from you for clean slices. Keep slices uniform for consistent mouthfeel.
Nigiri & Sashimi - Assembly
Shape rice
Wet your hands with a water + a little rice vinegar mixture (to prevent rice sticking). Take about 18–20 g (roughly 2 tablespoons) of sushi rice and form a compact oblong rice ball by gently squeezing between thumb and fingers; do not compress too tightly — it should hold together but still have a light texture.
Apply wasabi and place fish
Lightly dab about 1/8–1/4 tsp wasabi on one side of each chutoro slice or smear a thin line on the rice (adjust to taste). Lay the chutoro slice, wasabi side down, over the rice ball. Press gently at the center and tail end of the nigiri with your index and middle finger on top of the fish while pinching the underside of the rice with your thumb and remaining fingers to bind fish and rice together. Repeat for all pieces (yields approx. 9–10 nigiri).
Sashimi option
If serving chutoro sashimi instead of nigiri, arrange 6–8 slices per person on a chilled plate, fanning the slices and serve with small mounds of wasabi and gari.

Arrange nigiri on a serving platter. Garnish lightly with a sprinkle of toasted sesame seeds if desired. Serve immediately with soy sauce and pickled ginger on the side. For best texture and flavor, consume within 30 minutes of assembly.
