Cake Preparation
Melt Chocolate and Butter
In a heatproof bowl, combine bittersweet chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in 30-second intervals, stirring until smooth. Let it cool slightly.
Whisk Eggs and Sugar
In a separate mixing bowl, whisk together the large eggs, large egg yolks, and granulated sugar until the mixture is pale and slightly thickened, about 2-3 minutes.
Add Flour
Sift the all-purpose flour over the chocolate mixture. Gently fold the flour into the batter until just combined. Be careful not to overmix.
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
Bake the Lava Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is soft.
Cool Slightly
Remove from the oven and let the cakes cool for 1 minute before inverting onto dessert plates.

Serve with Ice Cream
Top each lava cake with a scoop of vanilla ice cream. Optionally, add fresh berries on the side for garnish.
