Make Fresh Paneer (Chenna)
Bring 1.5 liters whole milk to a gentle boil in a heavy-bottomed saucepan over medium heat, stirring occasionally to prevent scorching. When it begins to rise, reduce heat to low, add lemon juice or vinegar gradually while stirring gently until the milk curdles and the whey separates (clear yellowish liquid). Turn off heat.
Line a fine-mesh sieve with a double layer of cheesecloth or a clean muslin cloth placed over a bowl. Pour the curdled milk through the cloth, reserving the whey for another use if desired.
Rinse the curds under cold running water to remove any residual lemon/vinegar flavor and stop further cooking. Gather the cloth and gently squeeze out excess whey. Hang the cloth with the curds for 20–30 minutes to drain further so the curd is still moist but not dripping.
Knead and Shape
Transfer the drained curd to a clean plate. Add a pinch of salt and, if mixture feels loose, add 2 tsp cornstarch (or 2 tsp powdered milk/semolina) to help bind. Knead with the heel of your hand for 6–8 minutes until very smooth and pliable. Divide into 10–12 equal portions and roll each portion gently between your palms into smooth, slightly flattened discs about 3–4 cm across. Avoid cracks; if they appear, smooth them carefully.
Prepare Simmering Syrup and Poach
In a wide, shallow saucepan combine 1 cup sugar, 1 cup water and crushed cardamom pods; bring to a simmer and stir until sugar dissolves. Reduce to low simmer. Gently slide the shaped dumplings into the simmering syrup in a single layer (do not overcrowd—poach in batches if needed). Cover and simmer on low for 8–10 minutes; dumplings will expand and become spongy. Turn off heat and allow them to sit in the syrup for 10 minutes to finish cooking and absorb moisture.
Carefully remove the dumplings with a slotted spoon to a tray and let them cool to room temperature. Reserve 1/4 cup of the syrup to add to the mousse if desired for extra passion-yuzu soaking flavor.
Passion Fruit Yuzu Mousse / Soaking Liquid
Bloom Gelatin
Sprinkle 1 tsp gelatin over 1 tbsp cold water in a small bowl and let stand 5 minutes to bloom.
Warm Passion Fruit Mix
In a small saucepan, combine 3 tbsp passion fruit pulp, 2 tsp yuzu juice, 1 tsp lemon juice and 1–2 tbsp of the reserved sugar syrup (from the rasmalai) or 1 tsp water. Warm gently over low heat just until the mixture is warm (do not boil) to help dissolve gelatin. Remove from heat and stir in the bloomed gelatin until fully dissolved. Let cool slightly but not set.
Whip Cream and Mascarpone
In a chilled bowl, beat 1 cup heavy cream with 3 tbsp powdered sugar and 1/2 tsp vanilla extract to soft peaks. In a separate bowl, smooth 3 oz mascarpone with a rubber spatula until creamy. Fold about one-third of the whipped cream into the mascarpone to loosen it, then fold in the remaining whipped cream gently to keep airiness. Fold in the cooled passion fruit-yuzu mixture and a pinch of salt until uniform in color. Taste and adjust acidity with an extra 1/4 tsp lemon or yuzu if needed.
Chill the mousse in the refrigerator for 15–20 minutes to thicken slightly (it should still be spoonable). If mousse sets too firmly, fold gently to loosen before using.
Soak Dumplings
Place cooled rasmalai dumplings in a shallow dish. Spoon or pour the chilled passion fruit yuzu mousse over the dumplings, making sure each is partially submerged. Cover and refrigerate for at least 1–2 hours (preferably 3–4 hours) so dumplings absorb the mousse flavors and become chilled.
Garnish and Finish
Toast Nuts
In a small skillet over medium heat melt 1 tsp unsalted butter. Add 2 tbsp chopped almonds and 2 tbsp chopped pistachios and toast, stirring frequently, until fragrant and lightly golden, 2–3 minutes. Remove from heat and let cool.
Scatter the toasted nuts and 1 tsp black sesame seeds over the plated dessert. Garnish each portion with micro herbs or an edible flower if using.
Serve chilled. Leftovers keep covered in the refrigerator for up to 2 days (dumplings will continue to soften).
