Moong Dal Bisque

Rinse and soak (optional)
Rinse 1 cup split yellow moong dal under cold water until the rinse runs clear. You may soak the dal 15–30 minutes to shorten cooking time and improve creaminess; drain before using.

Sauté aromatics
In a medium heavy-bottomed pot, heat 1 tablespoon vegetable oil + 1 tablespoon butter over medium heat until shimmering. Add 1 tablespoon minced fresh ginger and sauté 1 minute until fragrant (do not brown).

Add potato, turmeric and dal
Add the diced potato (1 cup), 1 teaspoon ground turmeric and the rinsed moong dal (1 cup). Stir to coat with the aromatics for 1 minute.

Simmer
Pour in 3 cups water and bring to a gentle boil. Reduce heat to low, partially cover, and simmer 20–25 minutes, stirring occasionally, until dal and potato are very tender and breaking apart. If you soaked the dal, check at 12–15 minutes.

Finish with coconut cream and seasoning
Stir in 1 cup coconut cream and 1.5 teaspoons kosher salt. Warm gently over low heat for 3–5 minutes — do not boil vigorously after adding coconut cream. Adjust consistency with up to 1/2 cup warm water if too thick. Taste and add 1/2 teaspoon freshly ground black pepper and 1 tablespoon fresh lime juice; adjust salt/acid as needed.
Tempering / Finish (Optional aromatic garnish)

In a small saucepan or skillet, heat 1 teaspoon ghee or oil over low-medium heat. Add 1/2 teaspoon mustard seeds and 1/2 teaspoon cumin seeds and let them pop for a few seconds. Add 1 broken dried red chili and 6 curry leaves (if using) and fry briefly until aromatic (10–15 seconds). Pour the tempering over the bisque just before serving and gently stir to incorporate.
Truffle Brioche Toast

Toast and finish
Toast brioche slices 1–2 minutes per side until golden brown and crisp. Remove from heat, brush each slice with a light drizzle of truffle oil (about 1/8 tsp per slice), sprinkle a light pinch of finishing salt, and cut each slice into 4 small toast fingers or triangles. Scatter finely snipped chives over the toasts, if using.
Plating & Garnish

Ladle the hot moong & coconut bisque into warmed bowls. Swirl about 1 tablespoon (use from the 1/4 cup reserved coconut cream) of coconut cream on each bowl. Sprinkle 2 teaspoons toasted shredded coconut over the surface if using, and place a few microgreens or cilantro leaves in the center.

Serve each bowl with two toasts (or 4 fingers) of truffle brioche on the side or perched atop the bowl. For extra aroma, finish with a few drops of truffle oil over the bisque (optional).
