Noodles & Sauce

Cook noodles
Bring a large pot of salted water to a boil. Add Hakka noodles and cook according to package instructions until just al dente (usually 3–5 minutes). Drain and rinse briefly under warm water to stop cooking and remove excess starch. Toss with 1 teaspoon neutral oil to prevent sticking and set aside.

Make sauce
In a small bowl whisk together low-sodium soy sauce, dark soy sauce, kaffir lime juice (or lime juice + zest), rice vinegar, sesame oil, and neutral oil. In a second small bowl, dissolve cornstarch in warm water and stir into the sauce to create a glossy coating. Taste and adjust: add a pinch of salt only if needed (soy is salty). Set the sauce aside.

Heat a large, wide wok or skillet over high heat until smoking just begins. Add 1 tablespoon neutral oil and swirl. Add minced garlic, ginger, and the white parts of the scallions. Stir-fry 20–30 seconds until fragrant but not browned. Add the red chili-garlic paste and shredded kaffir lime leaves; continue to stir 15–20 seconds to bloom the aromatics.

Add vegetables in order of density to the wok: start with carrots and broccoli, stir-fry 1–2 minutes, then add bell pepper, mushrooms, baby corn, and snow peas. Keep the heat high and toss constantly so vegetables stay crisp-tender — total vegetable stir time should be 3–4 minutes. If using a protein that is already cooked (shrimp/chicken), add it now to warm through.

If using tofu: in a separate nonstick pan, heat 1 tablespoon neutral oil over medium-high heat. Pan-fry pressed tofu cubes turning until all sides are golden (about 8 minutes). Add to wok when vegetables are nearly done. If using eggs: push vegetables to one side of the wok, add a splash of oil to the empty side, pour in beaten eggs, scramble briefly until soft-cooked, then incorporate with vegetables. If using raw chicken: ensure it is cut thinly and stir-fry until cooked through before adding vegetables.
Combine & Finish

Reduce heat to medium-high. Add the cooked noodles to the wok with the vegetables and protein. Pour the prepared sauce evenly over the noodles. Using tongs or two spatulas, toss vigorously for 1–2 minutes so noodles are evenly coated and sauce thickens slightly. If the pan looks dry, add 1–2 tablespoons hot water to help distribute the sauce.

Taste and adjust seasoning: add more soy for salt, lime juice for brightness, or chili-garlic for heat. Finish with sliced green parts of scallions, toasted sesame seeds, cracked black pepper, and chopped cilantro. Toss once more to combine.
