Mango-Infused Milk

Basil Seeds (Sabja/Tukmaria)

Method

Mango-Infused Milk

    Bloom saffron

    Place 8 saffron threads into 2 tbsp warm milk and let sit 10 minutes to extract color and aroma.

    In a medium saucepan, combine 4 cups whole milk, crushed cardamom pods, and 3 tbs sugar. Heat over medium until just below simmer (small bubbles at edge), stirring occasionally to dissolve sugar.

    Lower heat to low, remove cardamom pods after 5 minutes, stir in mango puree and the saffron-infused warm milk. Heat 1–2 minutes more until homogenous. Remove from heat and cool to room temperature, then chill in refrigerator (at least 1 hour). Reserve 1 cup of this chilled mango-infused milk for the foam section.

Basil Seeds (Sabja/Tukmaria)

    Place 2 tsp basil seeds in 1 cup cold water. Stir well so seeds don't clump. Let soak 15–20 minutes until seeds swell and develop gelatinous coating. Drain excess water and keep soaked seeds refrigerated until assembly (they will be spoonable).

Vermicelli

    Bring 2 cups water to a rolling boil in a small saucepan. Add roasted vermicelli and 1 tsp sugar; boil gently 3–4 minutes until tender but not mushy.

    Drain any excess water, toss vermicelli with 1 tsp butter to prevent sticking. Chill briefly in refrigerator so it doesn't melt the ice cream on assembly.

Saffron Kulfi (Small scoops)

    Combine 1 cup evaporated milk (or cream/milk mix) with 2 tbs sweetened condensed milk in a small pot. Warm gently over low heat, add 6 saffron threads (slightly crushed or soaked), and stir until aroma develops (2–3 minutes). Do not boil hard.

    Remove from heat, fold in chopped pistachios if using. Allow to cool, then spoon into small molds or an ice cube tray and freeze until firm (2–3 hours). When ready to assemble, unmold small scoops using a warm spoon or knife.

Paan Lime Ice Cream (Small scoops)

    Fold 2 tsp paan paste (or finely chopped betel leaf mixture) and 0.5 tsp lime zest into 1 cup ice cream base until evenly distributed. Chill briefly if too soft, then portion into small scoops or mini-molds and refreeze until firm (1–2 hours). Reserve small scoops for finishing.

Rose Syrup & Garnishes

    If your rose syrup is thick, dilute to pouring consistency with 2 tbsp chilled water and stir. Set aside. Have crushed ice, crushed pistachios and dried rose petals ready for layering and garnish.

Foam (Mango-Milk Aeration)

    If using gelatin for stability: sprinkle 0.5 tsp gelatin over 1 tbsp cold water and let bloom 5 minutes. Warm briefly (10–15 seconds) until dissolved. Combine the dissolved gelatin with 1 cup chilled mango-infused milk.

    In a chilled bowl, whisk 0.25 cup heavy cream to soft peaks. Fold whipped cream gently into the 1 cup mango-infused milk (with dissolved gelatin if used). For a lighter foam, use an immersion blender for 15–20 seconds to aerate until a thick frothy consistency forms. If you have a siphon/cream whipper, strain the milk mixture into the siphon and charge once for a very stable foam; otherwise use the whisk/blender method.

    Taste and adjust sweetness or mango intensity by folding in up to 1 tsp mango puree or 1–2 tsp sugar if desired. Chill briefly until assembly so foam remains cold.

Assembly

    Chill tall tall glasses (or dessert bowls) for 10 minutes. Add a layer of crushed ice to the base (about 2–3 tbsp).

    Spoon 1–2 tbsp soaked basil seeds over the ice.

    Add 2–3 tbsp chilled vermicelli on top of the seeds.

    Pour about 3/4 cup mango-infused milk into each glass (recipe yields roughly 3–4 servings depending on glass size).

    Gently top with 2 small scoops (or one medium each) — one saffron kulfi scoop and one paan lime ice cream scoop — placing them so they sit partially submerged but visible.

    Pump or spoon 2–3 generous tablespoons of mango milk foam on top of the scoops to create a lofty cap. Drizzle 1–2 tbsp rose syrup over the foam so it cascades slightly into the drink.

    Finish with a sprinkle of crushed pistachio and a pinch of dried rose petals. Serve immediately with a long spoon and straw.
