Roasted Eggplant

Prepare and roast
Preheat broiler or grill to high. Prick the eggplants all over with a fork to prevent bursting. Rub with 2 tbs oil and sprinkle 1 tsp salt. Place directly on the grill or a foil-lined baking sheet under the broiler. Roast, turning every 6–8 minutes, until the skin is charred and the flesh is very soft (about 20–30 minutes depending on size). For a deeper smoke, finish briefly over an open flame if available.

Cool, peel, and drain: Transfer roasted eggplants to a bowl and cover with plastic wrap or a lid for 10 minutes to steam (this loosens skins). Peel off charred skin, discard stems, and place flesh in a sieve or fine colander to drain any excess liquid for 5–10 minutes. Then roughly chop or mash the flesh with a fork; set aside.

Temper and sauté aromatics
Heat 2 tbs oil or ghee in a heavy skillet over medium heat. Add cumin seeds and mustard seeds (if using). When they begin to sputter (30 seconds), add finely chopped onion and sauté until soft and golden, about 6–8 minutes. Add chopped green chilies, minced ginger and garlic; sauté 1–2 minutes until fragrant, stirring so garlic doesn't brown.

Cook tomatoes and spices
Add the chopped tomatoes and 1 tsp salt. Cook, stirring occasionally, until tomatoes break down and oil separates from the masala, about 8–10 minutes. Stir in ground coriander, ground cumin, turmeric, red chili powder, and half the garam masala; cook 1–2 minutes to bloom the spices.

Combine eggplant and finish
Add the mashed roasted eggplant to the pan. Mix thoroughly to combine with the tomato-spice mixture. Reduce heat to medium-low and cook, stirring occasionally, for 8–10 minutes so excess moisture evaporates and flavors meld. Taste and adjust salt; add amchur or lemon juice to brighten, and stir in the remaining garam masala. Finish by folding in chopped cilantro and remove from heat.

Optional smoke finish: For extra smokiness, heat a small piece of charcoal until red hot. Place a small heatproof bowl in the center of the eggplant pan, put the charcoal in the bowl, drizzle a teaspoon of oil over the hot coal, immediately cover the pan tightly with a lid for 2–3 minutes to capture smoke, then remove coal and bowl before serving.
Whipped Labneh & Garnish

Whip labneh
Place 1 cup labneh (or thick Greek yogurt), 1 tbs olive oil, 0.5 tsp lemon zest, and 0.25 tsp salt in a bowl. Whisk vigorously or beat with a hand mixer for 1–2 minutes until smooth and light. Taste and adjust seasoning. Transfer to a shallow serving dish and smooth the top.

Assemble and garnish
Spoon the hot baby baingan bharta over or alongside the whipped labneh as preferred, creating a well or streaks. Drizzle a little olive oil over the labneh, dust with smoked paprika, and scatter chopped cilantro or mint. Serve with lemon wedges and warm naan, roti, or rice.
