Prep

    Trim and slice

    Wash okra thoroughly and pat dry. Trim both ends and slice into 1–1.5 cm pieces. Thinly slice the onions into half-moons. Slit the green chilies lengthwise. Chop cilantro and set aside.

    Drying okra (optional to reduce slime)

    After cutting, spread okra on a paper towel or clean cloth for 20–30 minutes to dry. This reduces sliminess and helps it crisp when cooked.

Make Achari Masala

    In a small dry skillet over medium heat, toast fennel, nigella, fenugreek, mustard, and cumin seeds for 1–2 minutes until aromatic and slightly darker (watch closely to avoid burning). Remove from heat and let cool.

    Grind the toasted seeds coarsely using a mortar & pestle or spice grinder so you retain some texture. Set aside.

Cook Onions & Spices

    Heat 2 tablespoons oil in a wide skillet or heavy-bottomed pan over medium heat. Add sliced onions and a pinch of salt. Sauté, stirring occasionally, for 8–10 minutes until they are soft and beginning to caramelize. Remove two tablespoons of the caramelized onion for garnish (optional).

    Push onions to the side. Add remaining 1 tablespoon oil to the pan. Add ginger and garlic paste; sauté for 30 seconds until fragrant.

    Add turmeric, red chili powder, coriander powder and the freshly ground achari masala. Stir for 30–45 seconds to bloom the spices.

Cook Okra

    Add the sliced okra to the pan, stirring to coat it immediately with the spiced onion mixture. Spread the okra into an even layer and cook over medium-high heat without stirring for 3–4 minutes to get light browning.

    Stir and continue to cook for another 6–8 minutes, stirring every 2 minutes, until okra is tender and lightly browned. If the pan becomes too dry and spices start to stick, add 1–2 tablespoons water — avoid adding much liquid to keep okra from getting soggy.

Finish & Season

    Reduce heat to low. Add slit green chilies, ground achari masala, amchur (or pickled mango paste), tamarind paste (if using), and the reserved caramelized onions. Mix gently to combine.

    Season with salt, taste and adjust: add more amchur for tang, or 1/2 tsp sugar if too tart. Cook on low for 2–3 minutes so flavors meld.

    Turn off heat and stir in cilantro and ghee (if using). Cover for 1 minute then serve.
