Guava-Pineapple Base

Method

Prepare the Guava-Pineapple Base

Make guava puree (if not using store-bought)

Peel and core 2 medium ripe guavas. Roughly chop and place in a blender with 2 tablespoons of cold water. Purée until smooth (about 30 seconds). Pass the purée through a fine mesh strainer into a bowl, pressing with the back of a spoon to extract about 1 cup strained purée. Discard seeds and solids.

In a large measuring cup or pitcher combine 1 cup strained guava purée, 1 cup fresh pineapple juice, 1 cup cold water and 2 tablespoons simple syrup. Stir vigorously until smooth and evenly combined.

Add Citrus & Seasoning

Add 3 tablespoons fresh lemon juice and 1 teaspoon lemon zest to the guava-pineapple mixture. Stir to integrate and taste for balance.

Whisk in 1 teaspoon chaat masala. Taste the mixture — chaat masala should provide a subtle savory-tangy note; adjust by adding up to another 1/4 teaspoon if you prefer more spice. If mixture tastes too tart, add up to 1 tablespoon more simple syrup.

If using, whisk in 1/4 teaspoon black salt for an additional savory edge (optional).

Assemble & Finish

Fill four serving glasses with ice (about 1/2 cup ice per glass).

Divide the guava-pineapple-citrus base evenly among the glasses (about 3/4 cup per glass).

Top each glass with chilled club soda or sparkling water, roughly 1/4 cup (about 3 tablespoons) to each glass to give a gentle fizz. For a lighter fizz, add 1/3 cup per glass — adjust to taste. Stir gently with a bar spoon to combine without flattening the soda.

Garnish each glass with a sprig of fresh mint and a thin pineapple wedge or guava slice on the rim. Optionally, sprinkle a very light pinch of chaat masala or black salt on top of the foam or rim for visual contrast and extra flavor.
