Prep & Rim

Prepare Tajín rim

On a small plate, combine Tajín and coarse sea salt. Rub the glass rim with the lime wedge, then dip the rim into the Tajín-salt mixture to coat evenly. Set glass aside to dry briefly.

Mix Drink

In a cocktail shaker or jar, add tamarind paste and hot (not boiling) 1 tablespoon water to help dissolve and loosen. Stir or shake briefly until paste is smooth and pourable.

Add passion fruit puree, pineapple juice, lime juice, simple syrup, remaining cold water, and a handful of ice to the shaker with the dissolved tamarind.

Shake vigorously for 10–15 seconds to chill and blend flavors. If you prefer a frothier texture, shake 20 seconds.

Fill the rimmed serving glass with fresh ice (crushed recommended). Strain the shaken mixture into the prepared glass over ice.

If using club soda, top the drink with 2 oz club soda for a lighter, effervescent finish. Gently stir once to combine.

Taste and adjust: add up to 0.25 oz simple syrup if you prefer sweeter, or 0.25 oz lime juice for brighter acidity.

Garnish & Serve

Garnish with a pineapple leaf or small wheel on the rim and spoon half a passion fruit (seeds facing up) on top of the drink or floated beside the garnish.

Serve immediately with a straw and an extra lime wedge if desired.
