Mango Base
Prepare mango puree
Peel, pit, and dice 1 medium ripe mango (about 1 to 1 1/4 cups diced). Place the mango pieces in a blender and puree until smooth. If the mango is very fibrous, press the puree through a fine mesh strainer to remove fibers. Measure out 1 cup of smooth puree.
Combine mango, lime, and syrup. In a mixing container, whisk together 1 cup mango puree, 1/2 cup fresh lime juice (about 3–4 limes), and 2 tablespoons simple syrup until fully combined and slightly frothy. Taste and adjust sweetness: add up to 1 tablespoon more syrup if you prefer sweeter.
Ginger Component
Prepare fresh ginger flavor. Grate about 1 teaspoon fresh peeled ginger and muddle it gently with a small splash (about 1 tablespoon) of the mango-lime mixture in the bottom of a small bowl or measuring cup to release ginger aroma. Alternatively, steep grated ginger in 2 tablespoons hot water for 5 minutes, then strain and cool for a milder infusion.
Combine with ginger beer. Add the muddled or steeped ginger and any collected juices to the mango-lime mixture and stir to incorporate. Keep the ginger beer chilled and only add at final assembly to retain carbonation.
Assembly & Garnish
Chill glasses and prepare ice. If possible, chill two mule mugs or tall glasses in the freezer for 10–15 minutes. Fill each glass with an even amount of ice (about 1 cup ice per glass; total 2 cups).
Divide mango mixture. Pour the mango-ginger-lime mixture evenly between two prepared glasses, about 1/2 cup (4 fl oz) per glass.
Top with ginger beer. Gently top each glass with 6 oz (3/4 cup) chilled nonalcoholic ginger beer, pouring slowly to preserve bubbles. Give a gentle stir once to combine layers without flattening the soda.
Garnish and serve. Garnish each drink with a mint sprig, a lime wheel or wedge on the rim, and a mango slice if using. Optionally lightly clap the mint between your palms before garnishing to release aroma. Serve immediately while ice is cold and ginger beer is fizzy.
Notes on scaling and make-ahead: To make a pitcher (6–8 servings), multiply the mango base and ginger infusion by 3–4, keep ginger beer separate and add at serving. Store the mango-lime-ginger base refrigerated up to 24 hours; stir before using.
