Prep glass
Chill a martini or coupe glass in the freezer for at least 5–10 minutes or fill it with ice water while you prepare the cocktail.
Combine ingredients
In a cocktail shaker, add vanilla vodka (2 oz), passion fruit liqueur or puree (1 oz), fresh passion fruit pulp (from 1/2 fruit), fresh lime juice (0.5 oz), and simple syrup (0.25 oz).
Add ice and shake
Add a generous handful of ice (about 1 cup) to the shaker. Secure the lid and shake vigorously for 12–15 seconds until the shaker is very cold to the touch and mixture is well chilled and slightly frothy from the passion fruit.
Double strain
Empty the chilled glass of any ice water. Using a Hawthorne strainer and a fine strainer, pour the cocktail into the chilled martini or coupe glass to remove seeds and pulp for a smoother presentation. If you prefer pulpy texture, you may skip the fine strainer.
Serve with sparkling wine
Pour about 3 oz of chilled prosecco or other dry sparkling wine into a small flute or in a shot glass and serve it on the side. The classic way is to sip the sparkling wine between sips of the cocktail or to pour a splash into the cocktail just before drinking.
Garnish & finish
Float the reserved half passion fruit (cut side up) on top of the cocktail or place it on the rim for visual impact. Add an optional lime wheel to the rim.
Serve immediately: present the martini/coupe with the side of prosecco. Recommend guests decide whether to sip separately or add a splash of prosecco to the martini to brighten it.
