Preparation
Rim the glass
Run a cut lime wedge around the rim of a chilled coupe or rocks glass. Dip the rim into coarse salt or tajín placed on a small plate to coat. Set the glass aside.
Dry shake
In a cocktail shaker, combine 2 oz Patrón El Cielo (or reposado tequila), 0.75 oz fresh lime juice, 0.5 oz agave syrup, 0.5 oz orange liqueur, 0.25 tsp allspice dram (or a dash of aromatic bitters), and 0.5 egg white (if using). Seal the shaker and shake vigorously without ice for 10–15 seconds to emulsify the egg white and create a silky texture.
Wet shake
Open the shaker and add 6 ice cubes. Seal and shake hard for 12–15 seconds until the shaker is very cold and well-chilled.
Double strain & serve
Double-strain the cocktail through a fine-mesh strainer into the prepared chilled coupe or rocks glass to remove ice shards and any coagulated egg white. If serving on the rocks, pour over fresh large ice.
Garnish
Express an orange zest over the surface or place a lime wheel on the rim. Optionally top with a single dried edible flower for visual flair.
