Method
Classic Mojito Base (applies to all variations)
Prepare glass and mint
Place 10 fresh mint leaves in a sturdy highball or Collins glass. Add 2 teaspoons granulated sugar and 0.75 oz fresh lime juice.
Muddle gently
Use a muddler or the back of a spoon to gently press the mint leaves with the sugar and lime just enough to bruise the leaves and release oils. Do not over-muddle to avoid bitter chlorophyll.
Garnish
Garnish with a lime wedge and a mint sprig. Serve with a straw and enjoy.
Watermelon Variation (replace/add to base)
Muddle 3 oz fresh watermelon chunks with the mint, sugar, and lime in step 1 before adding rum. If watermelon is very sweet, omit the optional 0.25 oz simple syrup; if it's mild, add the simple syrup when you add the rum. Continue with steps for adding rum, ice, club soda, stirring, and garnish. For a smoother texture, strain a small amount of watermelon juice into the glass and discard large solids before adding ice.
Guava Variation (replace/add to base)
After muddling mint with sugar and lime, add 1 oz guava juice and 0.25 tsp agave syrup (if extra sweetness is desired) along with 2 oz white rum. Skip or reduce granulated sugar if guava juice is sweet. Add crushed ice, top with club soda, gently stir, and garnish with lime and mint. For a thicker, tropical mouthfeel, use guava nectar but reduce added sweetener accordingly.
Triple Berry Variation (replace/add to base)
Muddle 2 tbsp mixed berries with the sugar and lime in step 1 to release juices and color. Alternatively, add 0.75 oz prepared berry puree instead of fresh muddled berries. Proceed with adding rum, crushed ice, and club soda, then stir gently. If the berry mixture is tart, add a splash (about 0.25 oz) of simple syrup. Garnish with a few whole berries and a mint sprig.
