Chill the wine glass briefly in the freezer for 5–10 minutes if desired. Add 6–8 fresh ice cubes to the glass so the drink stays cold without quickly diluting.
Garnish prep (optional)
Make a lemon twist by peeling a thin strip of lemon zest avoiding white pith, or slice a thin apple wheel. Set aside for finishing.
Cocktail
In a mixing glass or small pitcher, combine the vodka, peach liqueur, fresh lemon juice and simple syrup. Stir briefly (8–10 seconds) to integrate—no need to shake.
Pour the spirit/liqueur mixture over the ice in the prepared wine glass.
Slowly top with chilled Champagne (120 ml) poured down the side of the glass to preserve bubbles. Pour gently to avoid overflow.
Give the drink one very gentle stir (1–2 rotations) to incorporate the ingredients without flattening the sparkling wine.
Finish with the lemon twist or apple slice placed on the rim or floated on top.
Serve immediately with a short stirring spoon or straw so the guest can re-stir if the ice melts and dilutes the balance.
