Base Margarita Mix (makes ~8 servings)
Make simple syrup (if not ready)
Combine 1/4 cup sugar and 1/4 cup water in a small saucepan; heat until sugar dissolves, cool to room temperature. (Note: recipe calls for 3 tbs total; make extra to taste.)
In a large pitcher or mixing container, combine tequila (12 oz), fresh lime juice (2 cups), triple sec (1 cup) and 3 tablespoons simple syrup. Stir until incorporated.
Add 4 cups of ice to the pitcher and stir vigorously for 20–30 seconds to chill and slightly dilute the mix. Alternatively, transfer the mix to a cocktail shaker in 2 batches with ice and shake 10–15 seconds, then combine. Strain the chilled mixture into a clean pitcher, discarding large ice.
Taste and adjust: if too tart, add up to 1–2 tbs more simple syrup or agave; if too sweet, add more lime juice (up to 2 tbs).
Set the base margarita mix in the refrigerator while you prepare flavor stations and glass rimming.
Flavor Stations (three 8-glass variations: yields flavored batches for 'Margarita Tree')
Mango-Orange
In a medium bowl, whisk together 1 cup mango purée and 1 cup fresh orange juice with 2 tablespoons agave syrup. Add 1 cup (8 oz) of the chilled base margarita mix and stir until uniform. Taste and add a little extra agave if needed for balance. Transfer to a labeled server.
Strawberry-Pineapple (Tropical Red)
Combine 1 cup strawberry purée and 1 cup pineapple juice with 1–2 teaspoons blue curaçao if you want a tropical color shift (optional). Stir in 1 cup (8 oz) of the base margarita mix and 1 tablespoon simple syrup or agave if the fruit is tart. Taste and adjust.
Smoky-Spicy (Chipotle-Jalapeño)
Muddle 6 jalapeño slices lightly in a bowl with 1 teaspoon chipotle in adobo (use less if you prefer milder heat). Add 1 cup of base margarita mix and 1/2 cup fresh lime juice if you want extra brightness; balance with 1 tablespoon agave if needed. Strain if you prefer no seeds. Label the server and note spice level.
Herbaceous Mint
Bruise 12 mint leaves gently in the palm or with a muddler to release oils. Add to 1 cup of base margarita mix with 1 tablespoon simple syrup. Let steep 5 minutes, then strain mint out (reserve a few leaves for garnish).
Garnishes & Glass Prep
Prepare rimming options: pour coarse sea salt or Tajín into one shallow dish, and coarse sugar into another dish. For a smoky rim, mix 1 teaspoon chipotle in adobo into a tablespoon of salt or Tajín and combine well.
Place extra ice in serving glasses (about 1 cup per glass).
To serve the Margarita Tree: label each flavored server and allow guests to pour about 4 oz (1/2 cup) of flavored margarita per glass (adjust depending on glass size). For a tasting 'flight' experience, fill small glasses with 2 oz pours of different flavored mixes and arrange on a shared tray — this creates the 'tree' or assortment effect.
Provide small skewers for fruit/jalapeño and additional lime wedges on the side.
Advise guests to taste a small sip first if glasses are rimmed with spicy chipotle salt.
