Prepare honey syrup (if not ready)

Combine equal parts honey and hot water (for this recipe 1/2 cup honey + 1/2 cup hot water makes plenty). Stir until fully combined and cool. Measure 0.5 oz for the cocktail.

Dry shake

In a cocktail shaker, add gin 1.5 oz, fresh lemon juice 0.75 oz, honey syrup 0.5 oz, elderflower liqueur 0.5 oz, aquafaba 0.5 oz, and 2 dashes orange bitters. Do not add ice yet. Seal shaker and shake vigorously for 15–25 seconds to emulsify the aquafaba and create a silky froth.

Wet shake

Open the shaker and add 6 ice cubes. Seal and shake again vigorously for 12–15 seconds until the outside of the shaker feels very cold (this chills and dilutes the cocktail and tightens the foam).

Strain into glass

Fill a chilled Collins or highball glass with 4 ice cubes. Double-strain the shaken mixture over the ice using a fine-mesh strainer or the shaker's strainer to remove ice shards and ensure a smooth texture.

Top with beer

Slowly pour 3 oz of a hazy IPA or unfiltered pale ale down the side of the glass so it layers into the cocktail and lifts some of the foam, creating a misty, cloudy appearance. Pour gently to preserve head and froth.

Finish and garnish

Give the drink one very gentle stir (1–2 revolutions) with a bar spoon to integrate the beer and spirit layer while keeping a soft foam on top. Garnish with a lemon twist expressed over the drink or an edible flower placed on the foam.

Serve

Serve immediately while cold and effervescent. Advise the drinker to sip through the foam to enjoy the aromatic top followed by bright citrus and hoppy beer notes.
