Chill glass and prepare ice

Place a rocks glass in the freezer for a few minutes or fill it with ice water while you prepare ingredients. Prepare one large clear ice cube or several large cubes and set aside.

Combine ingredients

In a mixing glass, add 2 oz Don Julio Añejo tequila, 2 dashes Angostura bitters, 1 dash orange bitters, and 0.25 oz simple syrup.

Stir and dilute

Fill the mixing glass with plenty of ice and stir gently for 20–30 seconds (about 20–30 strokes) until the mixture is well chilled and slightly diluted.

Prepare glass

Discard ice or water from the chilled rocks glass. Place the large ice cube into the glass.

Strain

Strain the stirred cocktail over the large ice cube into the chilled rocks glass using a julep strainer or Hawthorne + fine strainer for a clean pour.

Garnish and aromatics

Express the orange peel over the drink by holding it skin-side down about 3–4 inches above the glass and giving it a firm pinch so the oils spray onto the surface. Rub the peel around the rim, then drop it into the drink as a garnish.

Optional: Smoke finish

If using a smoking method, briefly capture smoke in the glass before adding the ice or use a smoking gun to fill the glass with wood smoke after pouring. Trap the smoke with a coaster or small plate for 20–30 seconds, then remove and serve. Adjust intensity to taste.
