Thoroughly clean and sanitize the inside of the keg, coupler, beer lines, faucets and any tools that will contact beer. Use a no-rinse sanitizer following the manufacturer's dilution and contact-time instructions. Rinse with potable water if required by sanitizer used.

Sanitize keg and equipment

Check that the coupler matches the keg type (D-system for US half-barrel). Inspect gas and beer lines for damage or contamination and replace if necessary.

Inspect coupler and lines

Secure the CO2 tank and attach the regulator to the tank. Make sure the regulator is off before opening the tank. Open the tank valve and set the regulator to the desired pressure (see serving pressure step). Confirm there are no leaks by applying soapy water to fittings and looking for bubbles.

Set up CO2 tank and regulator

If the keg is not already chilled to serving temperature (typically 36–45°F / 2–7°C depending on beer style), prepare an ice bath or engage the cold storage/glycol chiller so the beer will be cooled quickly after filling or during service.

Confirm you have approximately 120 pints (one half-barrel) of beer transferred and ready to keg. If the beer is carbonated already, proceed carefully to avoid excessive foaming. If uncarbonated and you plan to naturally carbonate in-keg, add priming sugar as directed below.

Confirm beer condition and volume

If natural carbonation is desired and the beer is uncarbonated: dissolve the priming sugar in 1–2 cups of boiling water, cool to room temperature, then gently pour into the sanitized keg before or during transfer. Typical amounts vary by beer and desired carbonation; 1 cup is an approximate starting point for a half-barrel but adjust by calculation for target volumes of CO2.

Add priming sugar (optional, for natural carbonation)

Attach the beer line to the keg's liquid-out or use a sanitized funnel/auto-siphon to transfer beer into the keg. To minimize oxygen pickup and foam: purge the keg with CO2 briefly (open the gas to pressurize keg to 10–12 psi, vent) before filling, then fill from the bottom or via a dip tube so beer displaces gas upward. Fill to the keg's recommended fill level (about full with recommended headspace for carbonation). Keep temperatures cold to reduce foaming.

Fill the keg

Once filled, securely seal the keg. Attach the coupler and apply a light CO2 pressure (10–12 psi) to seat and maintain a small headspace blanket. If naturally carbonating, set a lower pressure (~5–10 psi) and store at the appropriate conditioning temperature. If force-carbonating, raise pressure according to the target volumes of CO2 and temperature (see serving pressure).

Seal and pressurize

Force-carbonate by setting the CO2 regulator to the target serving pressure (commonly 10–14 psi depending on beer temperature and desired carbonation) and let sit for 24–72 hours, rocking the keg gently to speed equilibration, or use quick-carbonation methods (e.g., high-pressure short bursts). For natural carbonation, allow the keg to sit at conditioning temperature for 1–2 weeks until carbonation is achieved, checking pressure with the regulator.

Force- or naturally carbonate

Set regulator to the recommended serving pressure for the beer style and system length (typical starting point 10–12 psi at 38°F). Pull a test pint and evaluate head, carbonation and mouthfeel. Adjust pressure and temperature to correct excess or low foam: lower pressure or faster pour for too much foam, increase slightly for flat pours, or adjust temperature.

Keep keg chilled and under CO2 pressure for the duration of service. Replace CO2 tank as needed. When finished serving, follow cleaning protocol to flush beer lines and clean keg if reusing.

Thoroughly clean and sanitize the quarter-barrel keg, spear/coupler, faucet, tubing, and any tools with a no-rinse sanitizer. Rinse only if using a sanitizer that requires rinsing. Ensure all surfaces that will contact beer are sanitized and assembled with sanitized hands or sanitized gloves.

Sanitize keg and fittings

Chill the sanitized keg and the finished beer to the same cold serving temperature (recommended 36–40°F / 2–4°C). Cold fills reduce foaming and CO2 loss.

Chill keg and beer

Place the sanitized quarter-barrel keg on a clean, level surface tilted slightly so the filler can introduce beer gently down the side. Attach the coupler to your filling setup if using a filling wand; otherwise have the Sanke spear ready.

Position keg

If using CO2, briefly connect the CO2 line to the keg and apply 10–15 PSI to purge air from the headspace. Open the relief valve briefly to vent air. Repeat once more for minimal oxygen pickup.

Purge oxygen (optional but recommended)

Fill the keg slowly by introducing beer down the inner side wall or using a bottom-fill method to minimize foam. Stop filling when the liquid level is approximately 1.5–2 inches below the top to leave headspace for carbonation/pressure.

Fill with beer

Secure the keg spear/coupler lid per manufacturer's instructions, ensuring o-rings and seals are properly seated. Wipe and sanitize the exterior surfaces and apply the barrel label with beer name and fill date.

Close and seal keg

Attach the CO2 regulator and set to 10–12 PSI for ales or 12–14 PSI for lagers, depending on desired carbonation level (~2.2–2.6 volumes CO2 typical). Leave under pressure at serving temperature for 24–72 hours, rocking gently the first few times to increase surface contact if quicker carbonation is desired. Check carbonation by pulling a small test pour.

Force carbonate (recommended)

If you prefer natural carbonation in-keg, add a pre-measured priming sugar solution calculated for 7.75 gallons to achieve the desired volumes of CO2 (not recommended for long-term storage). Lightly mix by tipping the keg gently; allow 7–14 days at appropriate temperature for conditioning, then chill and test.

Natural/keg priming option

Set CO2 pressure to the appropriate serving pressure for your beer and line length (typically 8–12 PSI). Adjust to eliminate excessive foaming or flat pours.

Set dispensing pressure

Purge the faucet of any excess foam, hold a clean glass at a 45° angle, open the tap fully, and straighten the glass as it fills to obtain a 1/2–1 inch head. Close the tap quickly and serve.

Pouring a pint

Keep the keg refrigerated at serving temperature. Once tapped, a keg kept under CO2 at proper pressure will remain good for several weeks; monitor for off flavors. If naturally carbonated without CO2 backup, consume faster (within 7–14 days) to maintain quality.
