Cooking Instructions
Prepare the Noodles
Cook the lo mein noodles according to package instructions. Drain and set aside.
Sauté Vegetables
In a large skillet or wok, heat a tablespoon of oil over medium heat. Add the bok choy, snap peas, and carrots. Stir-fry for 3-4 minutes until tender-crisp.
Add Duck and Ginger
Add the duck confit, grated ginger, and chopped scallions to the skillet. Stir well to combine and heat through for about 2 minutes.
Mix in Noodles and Broth
Add the cooked lo mein noodles to the skillet along with the umami broth. Toss everything together and let it simmer for another 3-5 minutes until heated through.
Finish with Lime
Remove from heat and stir in lime juice. Adjust seasoning with salt and pepper to taste.
Serve
Divide the duck lo mein into bowls and garnish with additional scallions if desired. Serve hot.
