Prepare the Grits

In a medium saucepan, bring 4 cups of water to a boil. Stir in the white grits and a pinch of salt. Reduce the heat to low and simmer, stirring occasionally, for about 20-25 minutes, or until the grits are thick and creamy. Stir in 2 tablespoons of butter and set aside.

Cook the Shrimp

In a large skillet over medium heat, melt 2 tablespoons of butter. Add the diced onion and bell pepper, and sauté until they are soft, about 5 minutes. Add the minced garlic and cook for an additional minute.

Add Shrimp and Sauce

Add the shrimp to the skillet, sprinkle with Cajun seasoning, and cook until the shrimp turn pink, about 3-4 minutes. Pour in the chicken broth and heavy cream, stirring to combine. Allow the mixture to simmer for another 5 minutes until slightly thickened. Season with salt and black pepper to taste.

Serve

To serve, spoon the creamy grits onto plates and top with the shrimp mixture. Garnish with sliced green onions.
