Soup base
sweat aromatics
In a heavy 4- to 6-quart saucepan over medium heat, melt the unsalted butter. Add the minced shallots and diced celery and cook gently, stirring occasionally, until softened and translucent but not browned, about 6–8 minutes.

Sprinkle the all-purpose flour evenly over the softened shallots and celery and cook, stirring constantly, for 2–3 minutes to remove the raw flour taste and form a light roux. Do not let it darken.
deglaze
Slowly whisk in the dry sherry, scraping any bits from the pan, and cook until the alcohol smell subsides and the liquid is slightly reduced, about 1–2 minutes.
add liquids
Gradually whisk in the fish or seafood stock until smooth. Add the whole milk and bring the mixture to a gentle simmer over medium-low heat, stirring occasionally so the roux blends fully. Simmer gently for 8–10 minutes to slightly thicken.
season and finish base
Stir in the heavy cream, Old Bay seasoning, white pepper, and 1/2 tsp of the salt. Taste and adjust seasoning, keeping in mind crabmeat will add natural seasoning. Maintain the soup at a low simmer (do not boil) while you prepare the crab liaison.

Gently pick over the jumbo lump crabmeat to remove any cartilage or shell fragments; keep lumps intact. Reserve about 2 oz for garnish if using.

In a small bowl, whisk the 2 egg yolks with the lemon juice and the remaining 1/4 tsp salt until smooth. Temper the liaison by slowly ladling 2–3 tablespoons of the hot soup base into the yolk mixture while whisking constantly. Then, gradually whisk the tempered yolk mixture back into the pot of soup, stirring continuously. Heat gently for 1–2 minutes more (do not boil) until the soup is slightly thickened and velvety.
add crab
Fold the jumbo lump crabmeat into the warm soup gently, heating through for 1–2 minutes so the crabflakes warm without breaking apart. If using, stir in the optional 1 tablespoon finishing sherry off heat for extra aroma.
adjust final seasoning
Taste and adjust salt and white pepper as needed. If the soup tastes flat, a squeeze more lemon (up to 1/2 tsp) can brighten it.
serve
Ladle the soup into warmed bowls, garnish each bowl with reserved crab lumps, a sprinkle of sliced chives, and a whisper of smoked paprika. Offer extra sherry at the table if desired.
Optional finishing
If using optional finishing sherry, add 1 tablespoon off heat just before serving for aroma. Reserve small lumps of crabmeat and place on top of each bowl for an attractive presentation.
