Chill glass
Place a copper mule mug or highball glass in the freezer for 5 minutes or fill with ice water while you prepare ingredients to chill the glass.
Combine spirits and juices
In a cocktail shaker or mixing glass, add 2 oz Tito's vodka, 0.5 oz Domaine de Canton ginger liqueur, 2 oz fresh pineapple juice, and 0.5 oz fresh lime juice.
Shake
Fill the shaker with ice, secure the lid, and shake vigorously for 10–12 seconds until well chilled (or stir gently in a mixing glass if preferred).
Prepare glass
Discard ice water from the chilled glass (if used). Fill the chilled mule mug or highball glass with fresh cubed ice (about 1 cup).
Strain and top
Double-strain the shaken mixture into the prepared glass over the ice. Top with approximately 4 oz chilled ginger beer. Stir gently once or twice to combine, keeping the ginger beer's carbonation.
Garnish & Serve
Garnish
Thread 2 pieces of candied ginger onto a small cocktail pick and rest it across the rim of the glass. Add a fresh pineapple wedge or spear and a lime wheel to the rim. Optionally tuck a mint sprig beside the pineapple for aroma.
Final touch
Serve immediately with a short straw. Encourage the drinker to stir once before sipping so the Domaine de Canton and pineapple juice are evenly incorporated with the ginger beer.
