Prepare fish

Pat the selected fish dry with paper towels. If using whole fish, make 2–3 diagonal slashes on each side to allow marinade to penetrate. For fillets, leave skin on if desired and lightly score the skin to prevent curling.

Make marinade

In a bowl, whisk together 3 tbs olive oil, 3 tbs fresh lime juice, minced garlic, ground cumin, smoked paprika, dried oregano, 1.5 tsp salt, 1/2 tsp black pepper and 1/4 tsp chili flakes (if using) until well combined.

Marinate fish

Place the fish or fillets in a shallow dish or resealable bag. Pour the marinade over, making sure the fish is evenly coated and the marinade gets into the slashes or over the fillets. Marinate in the refrigerator for 20–30 minutes for fillets or up to 45 minutes for whole fish. Do not marinate longer than 1 hour to avoid 'cooking' the fish with acid.

Prepare grill

While the fish marinates, preheat the grill to medium-high heat (about 400–450°F / 200–230°C). Clean the grates thoroughly and oil them lightly by brushing with olive oil to prevent sticking.

Grill fish

Remove fish from refrigerator about 10 minutes before grilling to bring slightly toward room temperature. Brush the grill grates with additional oil. Place the fish skin-side down (for fillets) or directly on the grates (for whole fish). Grill with the lid closed when possible. For fillets: grill 3–5 minutes skin-side down until grill marks form and the skin releases easily, then flip and grill 2–4 minutes more until opaque and flaky (internal temp ~135–140°F / 57–60°C). For whole fish (about 1–1.5 lb): grill 6–8 minutes per side depending on thickness, until flesh is opaque and flakes. Timing will vary by thickness—use a fork to test for flakiness. Avoid overcooking to keep fish moist.

Rest

Carefully transfer the grilled fish to a warm platter and let rest for 2–3 minutes before serving. This lets the juices redistribute.

Pico de Gallo

While the fish is marinating or grilling, combine the 1.5 cups diced tomatoes, 1/2 cup diced onion, 1/2 cup chopped cilantro and the minced jalapeño (if using) in a mixing bowl.

Add 2 tbs fresh lime juice, 1/2 tsp salt and 1/4 tsp black pepper. Gently toss to combine. Taste and adjust seasoning with additional lime or salt as desired. Let sit for 5–10 minutes before serving so flavors meld.

To Serve

Plate each portion of grilled fish and spoon a generous portion of fresh pico de gallo on top or alongside. Garnish with lime wedges and cilantro sprigs. Serve immediately.

Optional: Offer extra lime wedges and hot sauce at the table.
