Prepare and chill

Chill a coupe or martini glass by filling it with ice water while you prepare the cocktail. If using an egg white, ensure the egg is fresh and at cool room temperature.

Combine ingredients

In a cocktail shaker, add 2 oz gin, 0.5 oz blue curaçao, 0.75 oz fresh lemon juice, 0.25 oz simple syrup and 0.5 oz egg white (if using).

Dry shake

Seal the shaker and shake vigorously for 10–15 seconds without ice (dry shake). This emulsifies the egg white and creates a silky foam.

Wet shake

Add a large handful of ice (about 1 cup) to the shaker, reseal and shake again vigorously for 12–15 seconds until the shaker is very cold to the touch and well diluted.

Strain and serve

Dump the ice water from the chilled glass. Double-strain the cocktail into the chilled coupe using a cocktail strainer and a fine mesh strainer to catch ice shards and any coagulated egg bits. The drink should have a pale blue color with a creamy foam layer on top if you used egg white.

Garnish

Express a lemon twist over the surface to release oils, run it around the rim and drop it into the drink. Optionally, float a cocktail cherry or an edible flower on the foam for visual appeal.

Serve

Serve immediately while cold. Sip slowly to appreciate the citrus, gin botanicals and the sweet orange notes of blue curaçao balanced by the foam (if used).
