    Prepare crab and aromatics

    If using frozen crab meat, thaw and drain thoroughly (pat dry). Finely chop imitation crab or lump crab into small shreds/chunks so it mixes uniformly with the cream cheese. Trim and thinly slice green onions on a bias.

    In a medium mixing bowl, add the softened cream cheese and beat briefly with a fork or rubber spatula until smooth and slightly whipped.

    Add the chopped crab, sliced green onions, mayonnaise, soy sauce, sesame oil, lemon juice, kosher salt, black pepper, and sriracha (if using). Fold gently until evenly combined. Taste and adjust seasoning — add a pinch more salt, a squeeze of lemon, or more sriracha to balance flavors.

    Transfer the filling to a bowl and chill in the refrigerator for 15–20 minutes to firm slightly; this makes wrapping easier and prevents leaking during frying.

Assembly & Wrapping

    Set up a clean work surface and open your egg roll wrappers. Keep unused wrappers covered with a damp towel to prevent drying.

    Make the flour slurry/sealant by mixing 1 tablespoon flour with 2 tablespoons water until smooth. This will act as glue for the wrapper edges.

    Place one wrapper diamond-shaped with a corner pointing toward you. Spoon about 2 heaping tablespoons (approximately 1.5–2 oz) of the chilled crab filling onto the lower third of the wrapper, leaving about 1/2 inch border on each side.

    Fold the bottom corner up over the filling, tuck snugly, then fold the two side corners inward toward the center, creating an envelope. Brush the top corner edge lightly with the flour slurry, then roll tightly away from you to seal. Press the sealed edge gently to secure. Repeat with remaining wrappers and filling. You should get about 10–12 rolls depending on filling amount and wrapper size.

    Place finished rolls seam-side down on a tray and refrigerate for 10 minutes to set the seal; this helps prevent unrolling in the oil.

Frying

    Pour oil into a deep, heavy pot or deep-fryer to a depth of about 2–3 inches (enough to mostly submerge the rolls). Heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of wrapper into the oil: it should sizzle and float up steadily without browning instantly.

    Fry the egg rolls in batches (do not overcrowd). Gently lower 3–4 rolls seam-side down into the oil. Fry for 3–4 minutes, turning occasionally with tongs, until golden brown and crisp on all sides. Internal filling should be heated through; avoid overcooking which can burst wrappers.

    Using a slotted spoon or tongs, transfer cooked rolls to a wire rack or paper towel-lined plate to drain. Let rest 1–2 minutes before serving. Repeat until all are cooked.

Serving

    Serve crab meat rolls hot with dipping sauces such as soy sauce, ponzu, or spicy mayo. Garnish with lemon wedges and extra sliced green onions if desired.

    Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in a 375°F (190°C) oven for 8–10 minutes to crisp, or re-fry briefly at 350°F (175°C) until heated through.
