Preparing the Milk

Heat the Milk

In a heavy-bottomed saucepan, pour in the whole milk and place over medium heat. Slowly heat the milk until it reaches 180°F (82°C), stirring occasionally to prevent scorching.

Cool the Milk

Once the milk reaches 180°F, remove it from the heat and let it cool to about 110°F (43°C). This might take about 30-40 minutes. Use a thermometer to check the temperature.

Add Yogurt Starter

Once the milk has cooled to 110°F, add the plain yogurt to the milk. Whisk gently until the yogurt is fully incorporated into the milk.

Fermenting Yogurt

Transfer and Cover

Pour the milk and yogurt mixture into a glass or ceramic container. Cover the container with a lid.

Wrap and Insulate

Wrap the container in a towel or blanket to keep it warm. Place it in a warm area of your kitchen, or use a yogurt maker if you have one.

Let it Ferment

Allow the yogurt to ferment for 6 to 12 hours depending on your desired tartness. The longer it ferments, the tangier it will be.

Once the yogurt has reached your desired taste and consistency, remove it from the warm area and refrigerate for at least 2 hours before serving.
