Prepare whole spices

Lightly crush the cardamom pods and peppercorns with the side of a knife or mortar & pestle. Break the cinnamon stick into two if needed so it fits comfortably in your pot.

Bloom the tea and spices

In a medium saucepan, combine 1 cup water, crushed cardamom pods, cloves, cinnamon stick, sliced ginger, crushed peppercorns and the tea. Bring to a gentle simmer over medium heat, then reduce heat to low and simmer 3 minutes to release flavors.

Add milk and sweeten

Add 3 cups whole milk and 3 tablespoons sugar to the saucepan. Increase heat to medium and warm until steam rises (do not let it vigorously boil). Stir frequently to prevent scorching. Simmer gently 6–8 minutes so the milk takes on the spice and tea flavors.

Finish the base

Remove from heat, cover and steep 3 minutes more for stronger flavor. Strain the mixture through a fine-mesh sieve into a clean pot or large measuring cup to remove tea leaves and whole spices. Stir in 1 teaspoon vanilla extract.

Bloom saffron

Place 10 saffron threads in 1 tablespoon warm water and let sit 5–10 minutes until liquid deepens in color and aroma develops.

Combine rose and saffron

Stir the saffron with its soaking liquid and 1 teaspoon rose water into the strained chai-spiced milk. Taste and adjust: add up to another 1/2 teaspoon rose water if you prefer a more floral note, but use sparingly so it doesn't become perfumed.

Garnish & Finish

Ladle the finished 'The Taj' into warmed cups. The drink should be warm, aromatic, and lightly saffron-tinged.

Garnish

Sprinkle each cup with a pinch of ground cinnamon, 1/2 tablespoon finely chopped pistachios, and optionally a couple of edible rose petals. If desired, dust lightly with a tiny pinch of cardamom powder to reinforce the spice profile.

Storage and reheating

If not serving immediately, cool to room temperature and refrigerate in a sealed container up to 48 hours. Reheat gently on the stovetop over low heat, stirring frequently to avoid scorching. Add a splash of milk when reheating if the drink has reduced.
