Base
Combine yogurt and water
Place 2 cups plain whole-milk yogurt and 1 cup cold water into a blender or large mixing bowl. If using a whisk, ensure the bowl is deep enough to avoid splatter.
Add salt
Add a small pinch of salt to the yogurt mixture to brighten the flavors. Salt is small but important for balance.

Add 3 tablespoons granulated sugar to the yogurt mixture. If you prefer less sweet, start with 2 tablespoons and adjust after blending.
Add aromatics (optional)
If using, add 1 teaspoon cardamom powder and 1 teaspoon rose water to the mixture. These are optional but traditional — adjust to taste.
Blend the mixture on high for 30–60 seconds until smooth and slightly frothy. The goal is a uniform, creamy liquid with some froth on top. If whisking by hand, whisk vigorously for 1–2 minutes until smooth and slightly aerated.

Adjust consistency and chill
Taste the lassi and adjust sweetness or cardamom if needed. If the lassi is too thick, add up to 1/4 cup more cold water and stir or pulse briefly. For a chilled drink, add ice cubes to the blender and pulse once or twice to chill without overly diluting; alternatively, serve over ice in glasses.
Serve
Pour the lassi into two tall glasses. Garnish each glass with a sprinkle of chopped pistachios or almonds and a mint leaf if desired. Serve immediately while frothy and cold.
