Measure and chill

Make sure the yogurt is well chilled. Measure 2 cups of plain yogurt and set aside. Keep the cold water and ice in the refrigerator until ready to blend.

Combine ingredients

In a blender or large mixing jar, add the 2 cups chilled yogurt, 1 cup cold water, 6 ice cubes, and 1 teaspoon fine salt. If using, add 1/4 teaspoon roasted cumin powder and a pinch of black pepper for extra flavor.

Blend until frothy

Blend on medium-high for 20–30 seconds (or whisk vigorously by hand for 1–2 minutes) until the mixture is smooth, homogenous, and slightly frothy. Taste and adjust salt: add up to another 1/4 teaspoon if needed, blending briefly to incorporate.

Serve

Pour the lassi into two tall glasses (about 2 servings). Garnish each glass with a sprinkle of roasted cumin powder and about 1/2 tablespoon chopped fresh mint, if using. Optionally add a couple of extra ice cubes to each glass.

Storage

serve immediately for best froth and chill. Leftover lassi can be kept covered in the refrigerator for up to 24 hours; stir or re-blend briefly before serving as separation may occur.
