Soak

Rinse 1 cup whole urad dal and 2 tsp raw rice under running water until water runs clear. Soak them together in enough water to cover for 4 to 6 hours at room temperature.

Drain

After soaking, drain the dal and rice in a fine-mesh sieve for 5–10 minutes so there's very little surface water but the dals remain moist.

Grind

In a wet grinder or high-speed blender, grind the soaked dal and rice with about 3 tablespoons of water. Grind in short pulses, scraping frequently, until you get a smooth, light, and fluffy batter. Add water only as needed — the batter should be thick but pipeable (like a thick pancake batter).

Aerate & Salt

Transfer the batter to a large bowl. Beat it vigorously for 3–5 minutes (use the back of a spoon or fold repeatedly) to incorporate air; this yields soft medu vadas. Add 1 tsp salt and mix well. The batter should be slightly sticky and hold shape.

Flavorings & Mix-ins

Coarsely crush 1 tsp black peppercorns and mix with 1 tsp cumin seeds. Fold these into the batter. Add 1 finely chopped green chili, 8 chopped curry leaves, 1 tsp grated ginger, and 1/2 small finely chopped onion if using. Mix thoroughly to distribute evenly. Taste a tiny bit (optional) and adjust salt or chili.

Shaping

Heat 3 cups vegetable oil in a deep frying pan over medium heat until a small piece of batter sizzles and rises slowly (about 350°F / 175°C). Keep oil at a steady medium heat so vadas brown evenly without burning.

Wet your hands with water. Take a golf-ball-sized portion (about 2 tbsp by volume) of batter and roll between your palms to form a smooth ball. Press the ball gently with your thumb through the center to create a hole and flatten slightly into a doughnut shape about 2–2.5 inches (5–6 cm) wide. If batter sticks, dip your thumb in water occasionally.

Frying

Gently slide 3–4 vadas into hot oil without overcrowding. Fry, turning occasionally, adjusting heat so they cook through and develop an even golden-brown crust, about 3–4 minutes per side (total 7–9 minutes depending on size). Use a slotted spoon to turn carefully.

When both sides are golden and vadas float, remove them to a plate lined with paper towels to drain excess oil. If making larger batches, keep cooked vadas warm in a low oven (150°C / 300°F) on a tray.

Serving

Serve medu vadas hot with coconut chutney and sambar. They’re best eaten within 30 minutes for maximum crispness outside and soft, airy interior.
