Prepare eggplant

Wash and dry the eggplants. Cut off stems and slice into 1-inch cubes (or 1/2-inch thick rounds if preferred). If eggplants are very large or slightly bitter, sprinkle lightly with 1/2 tsp salt and let sit 15 minutes, then pat dry.

Prepare vegetables

Core and roughly chop the tomatoes. Peel and finely chop the onion. Mince the garlic and grate the ginger. Chop the cilantro and green chili (if using).

Cooking

Toast cumin seeds

Heat a wide sauté pan or heavy skillet over medium heat. Add 3 tbs oil. When oil shimmers, add 1 tsp cumin seeds and fry 15–30 seconds until fragrant and seeds start to sizzle (be careful not to burn).

Sauté onions

Add the chopped onion to the pan. Cook on medium heat 6–8 minutes, stirring occasionally, until translucent and beginning to brown at the edges.

Add aromatics & spices

Stir in the minced garlic, grated ginger, and chopped green chili. Cook 1 minute until aromatic. Add ground coriander (2 tsp), ground cumin (1 tsp), turmeric (1/2 tsp), and red chili powder (1/2 tsp). Stir continuously 30–45 seconds to bloom the spices.

Cook tomatoes into gravy

Add the chopped tomatoes and 1/4 tsp of the salt to the pan. Cook 6–8 minutes, stirring and smashing tomatoes with the back of a spoon, until they break down into a saucy, slightly thick gravy. If mixture becomes too dry, add 2–3 tbs water.

Add eggplant

Add the cubed eggplant to the tomato-onion gravy and stir to coat pieces evenly. Add the remaining salt (about 1 tsp) and 3/4 cup water or stock. Bring to a gentle simmer, cover, and reduce heat to medium-low.

Simmer until tender

Simmer covered 12–18 minutes, stirring once or twice, until eggplant is tender and has absorbed much of the gravy. If the pan looks dry during cooking, add a splash of water (1–2 tbs) as needed. For a slightly roasted flavor, uncover for the last 4–5 minutes and turn heat up to medium to allow edges to brown.

Finish

Sprinkle garam masala (1/4 tsp) and lemon juice (1 tsp) over the cooked eggplant. Stir in 1/2 cup chopped cilantro. Adjust salt and heat to taste. If you prefer a smoother gravy, mash a few eggplant pieces with the back of the spoon to thicken the sauce.

Garnish & Serve

Transfer to a serving bowl, garnish with the extra 2 tbs chopped cilantro. Serve hot with steamed rice, flatbread (naan/roti), or as part of a larger meal.
