Marinated Chicken

Clean and pat-dry the chicken pieces. In a large bowl combine yogurt, ginger paste, garlic paste, red chili powder, turmeric, garam masala, ground coriander, salt, lemon juice and 2 tbs oil. Add the chicken and toss to coat thoroughly. Cover and marinate in the refrigerator for at least 1 hour, preferably 3–4 hours or overnight for best flavor.

Remove marinated chicken from refrigerator 20 minutes before cooking to take the chill off.

Rice & Aromatics

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

Bring 6 cups water to a rolling boil in a large pot. Add 1 tsp salt, cardamom, cloves, peppercorns, bay leaves and cinnamon stick.

Add the drained rice to the boiling water and parboil until the grains are about 70% cooked (soft on the outside but still firm in the center) — about 6–8 minutes depending on rice. Stir gently to prevent sticking.

Drain the rice in a colander and set aside. Discard whole spices from the pot or reserve for layering if you like the presentation.

Cooking Base & Layering

Heat 2 tbs ghee (or 2 tbs ghee + 1 tbs oil) in a heavy-bottomed wide pot or Dutch oven over medium heat. Add sliced onions and fry until golden brown and caramelized, about 10–12 minutes. Remove half the fried onions and reserve for topping.

To the remaining onions in the pot, add marinated chicken (with any marinade). Increase heat to medium-high and brown the chicken for 5–7 minutes, stirring occasionally, until the exterior is lightly seared.

If using, stir in chopped tomato and slit green chilies and cook 3–4 minutes until tomatoes soften. Sprinkle 1 tbs biryani masala (or garam masala) and adjust salt (add the 0.5 tsp from Seasonings if needed), mix well.

Reduce heat to low. Spread half of the chopped cilantro and half of the mint over the chicken. Layer half of the parboiled rice evenly over the chicken. Sprinkle half of the reserved fried onions, half of the saffron-milk mixture (see next step), and a few drops of rose/kewra water if using. Repeat with remaining cilantro, mint, rice, fried onions, saffron milk and remaining biryani masala.

Saffron Milk

Warm 3 tbs milk and steep saffron threads in it for 5 minutes to release color and aroma. Pour half over each rice layer while assembling.

Dot the top layer with remaining 1 tbs ghee and scatter roasted nuts if using. Cover the pot with a tight-fitting lid. For extra seal, place a sheet of aluminum foil between pot rim and lid or press a damp kitchen towel around the lid to trap steam.

Cook on very low heat (dum) for 20–25 minutes to finish cooking the rice and let flavors meld. Alternatively, place the pot on a tawa (griddle) heated over low and set the pot on top, cooking for 20–25 minutes to prevent direct high heat burning the bottom.

Finishing & Serving

After 20–25 minutes, turn off heat and let the biryani rest, covered, for 10 minutes to settle the steam.

Gently fluff the rice with a fork or spatula, taking care not to break the grains or mix too vigorously — you want visible layers of rice and chicken.

Serve hot, garnished with remaining fried onions, fresh cilantro and a squeeze of lemon if desired. Accompany with raita, salad or pickles.
