Prepare the Noodles

Cook the rice vermicelli noodles according to package instructions. Drain and set aside.

Cook the Shrimp

In a pan, lightly sauté the shrimp over medium heat until they turn pink and are cooked through, about 3-4 minutes. Remove from heat and let cool.

Prepare the lettuce leaves, julienned carrot, julienned cucumber, cilantro, and mint leaves.

Soak Rice Paper

Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds until soft, then lay it flat on a clean surface.

Assemble the Rolls

On the bottom third of the rice paper, place a lettuce leaf, a small amount of cooked noodles, a few pieces of shrimp, carrot, cucumber, cilantro, and mint. Fold the sides over the filling and then roll it up tightly from the bottom.

Repeat the soaking and rolling process with the remaining rice paper wrappers and filling ingredients.
