Cook the Lobsters
In a large pot of boiling salted water, add the live lobsters and cook for about 8-10 minutes until they turn bright red. Remove from water and set aside to cool.
Prepare the Filling
Once lobsters are cool, remove the meat from the tails and claws, chop it into bite-sized pieces, and set aside. Reserve the shells.
Make the Sauce
In a large skillet, melt the butter over medium heat. Add shallots and garlic, sauté until soft. Pour in the white wine and let it reduce by half. Stir in the heavy cream, Dijon mustard, and chopped tarragon, simmer for a few minutes until slightly thickened.
Combine
Add the lobster meat into the sauce, season with salt, black pepper, and paprika. Stir to combine and heat through.
Fill the Shells
Preheat the broiler. Spoon the lobster mixture back into the lobster shells, top with grated Gruyère cheese.
Broil
Place the filled shells on a baking sheet and broil for about 3-5 minutes or until the cheese is bubbly and golden brown.
