Rinse the sand dabs under cold water and pat them dry with paper towels.

2. Seasoning

In a shallow dish, combine the flour, salt, and black pepper. Dredge each sand dab fillet in the flour mixture, shaking off any excess.

3. Cooking

In a large skillet, heat the butter and olive oil over medium heat. Once hot, add the prepared sand dabs and cook for about 3-4 minutes on each side, or until golden brown and cooked through.

4. Serving

Remove the sand dabs from the skillet and place them on a serving platter. Squeeze fresh lemon juice over the top and garnish with chopped parsley. Serve immediately.
