Cooking the Rice

Cook the Arborio rice

In a medium saucepan, combine the Arborio rice and 2 cups of the milk. Cook over medium heat, stirring frequently until the rice is tender and the mixture is creamy, about 20-25 minutes.

Making the Custard

Prepare the custard mixture

In a large mixing bowl, whisk together the eggs, sugar, vanilla extract, and salt until well combined. Gradually add the remaining 2 cups of milk, whisking until smooth.

Combine rice and custard

Once the rice is cooked, slowly pour the custard mixture into the rice, stirring constantly. Cook this mixture over low heat until it thickens slightly, about 10 minutes, making sure not to boil.

Serving

Serve the custard

Pour the rice custard into individual serving bowls. Whip the heavy cream until soft peaks form and serve it on the side. Garnish each bowl with a fresh mint leaf before serving.
