Preparation of Meats

Season the Meats

In a bowl, combine the pork and flank steak with salt, black pepper, garlic powder, and cumin. Mix well to coat the meats evenly in the seasonings.

Cook the Puerco

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the seasoned pork and cook for about 5-7 minutes, or until fully cooked and browned. Remove from skillet and let rest.

Cook the Arrachera

In the same skillet, add the remaining tablespoon of olive oil. Add the seasoned arrachera and cook for 4-6 minutes, or until desired doneness. Remove from skillet and let rest.

Assembling the Cachetadas

Warm the Tortillas

In the same skillet, slightly warm the corn tortillas for about 30 seconds on each side until pliable.

Layer the Meats

On one tortilla, layer the cooked puerco and arrachera. Top with chopped onion and cilantro.

Top with Another Tortilla

Place another tortilla on top to create a sandwich-like structure.

Serve with Coca Cola

Serve the combo cachetadas hot, accompanied by a chilled Coca Cola and lime wedges on the side for squeezing over the cachetadas.
