Prepare the Marinade

In a blender, combine garlic cloves, dried guajillo chiles (stemmed and seeded), cumin, oregano, salt, and black pepper. Blend until smooth, adding a little water if necessary to create a paste.

Marinate the Pork

Cut the pork shoulder into large chunks and place them in a bowl. Pour the marinade over the pork, ensuring all pieces are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Cook the Pork

Preheat an oven or grill to medium-high heat. Skewer the marinated pork onto a vertical spit or place in a roasting pan. If using a spit, cook for about 1.5 hours, turning occasionally, until the pork is cooked through and slightly charred. If using an oven, roast for about 1.5 hours, basting occasionally with the marinade.

Prepare the Tacos

Once the pork is cooked, let it rest for 10 minutes before slicing thinly. Warm the corn tortillas on a skillet or grill.

Assemble the Tacos

Place a few slices of the cooked pork on each tortilla. Top with diced onion, chopped cilantro, and a slice of pineapple. Squeeze fresh lime juice over the top.

Open the can of Coca Cola and serve it chilled alongside the tacos.
