Season and render

Pat brisket pieces dry and season evenly with the 18 g salt. In a wide, heavy pot (dutch oven or saucepan) add the 150 ml vegetable oil or lard and warm over medium heat until shimmering but not smoking.

Add the brisket in a single layer. Sear briefly on both sides (2–3 minutes per side) to develop color — you are not trying to fully cook it, just to brown surfaces. Remove brisket and set aside.

Lower heat to medium-low. Add quartered onion, smashed garlic, bay leaves, dried oregano and peppercorns to the fat and cook for 2 minutes to aromatize.

Return brisket to the pot. Add up to 200 ml water only if the fat does not come about halfway up the meat pieces; the goal is to confit the brisket in fat and gentle steam. The meat should be mostly submerged in fat with a little liquid.

Bring to a bare simmer, cover partially, and cook gently for 3 to 3.5 hours, turning the pieces once or twice, until meat is very tender and can be shredded with a fork. Maintain a low simmer (not a boil).

Once tender, remove brisket to a tray and let cool slightly. Reserve the fat if desired. Shred the brisket into bite-sized pieces, then spread in a single layer on a rimmed sheet pan. Optionally crisp the shredded suadero under a broiler or in a hot skillet for 3–5 minutes to get some caramelized edges before building tacos.

Salsa Goku (Smoky Tomato-Chile Salsa)

Toast chiles briefly: Heat a small dry skillet over medium. Add guajillo and árbol chiles and toast 10–20 seconds per side until aromatic, careful not to burn. Remove, place in a bowl, cover with very hot water and soak 10 minutes until pliable. Drain and discard seeds if you desire milder heat.

Char tomatoes, onion and garlic: In the same skillet (or over an open flame), brush tomatoes, the 1/4 onion and 1 clove garlic with 1 tsp vegetable oil and char until skins blacken and blister and vegetables soften (5–8 minutes), turning as needed.

Combine in blender: Add charred tomatoes, soaked chiles, charred onion and garlic, 1 tsp apple cider vinegar and 1 tsp salt to a blender. Blend until mostly smooth, adjusting water by tablespoon if too thick. Taste and adjust salt or a squeeze of lime if desired.

Strain (optional) for a smoother salsa. Transfer to a bowl and set aside at room temperature to allow flavors to marry.

Guacamole

Halve and pit avocados. Scoop flesh into a bowl and mash coarsely with a fork until slightly chunky.

Add 1 tbs lime juice, 2 tsp finely minced white onion, 1/2 minced jalapeño, 1 tbs chopped cilantro, 1/2 tsp salt and 1/4 tsp black pepper. Stir gently, taste and adjust salt or lime as needed. Keep covered with plastic touching surface until assembly to prevent browning.

Taco Assembly & Garnish

Warm tortillas: Heat a cast-iron skillet or comal over medium-high. Lightly brush tortillas with 1 tsp neutral oil and warm 20–30 seconds per side until pliable and slightly charred. Keep tortillas warm wrapped in a clean towel.

Assemble tacos: Place 1–2 tablespoons of shredded suadero onto each warm tortilla (plan 2–3 tacos per person for 4–6 people). Top with a small spoonful of guacamole, 1 teaspoon of salsa goku per taco (adjust to heat preference), diced white onion and chopped cilantro.

Serve: Plate tacos with lime wedges for squeezing. Offer extra salsa and guacamole on the side. Provide napkins — suadero is rich and juicy.
