Rehydrate and simmer hibiscus

Place the rinsed hibiscus flowers in a medium saucepan with 4 cups water. Bring to a boil over high heat, then reduce to a simmer and cook until the flowers are tender and the liquid is reduced slightly, about 10–12 minutes.

Drain and reserve

Drain the hibiscus through a fine mesh strainer, reserving about 1/4 cup of the cooking liquid. Squeeze excess liquid from the flowers and transfer the hibiscus to a bowl to cool slightly.

Shred the hibiscus

Using your hands or two forks, shred the hibiscus into bite-size strands. Set aside.

Cook aromatics

Heat 2 tbs olive oil in a skillet over medium heat. Add the chopped onion and cook, stirring, until translucent and softened, about 4–5 minutes. Add the minced garlic and cook another 30–45 seconds until fragrant.

Combine and season

Add the shredded hibiscus to the skillet with the onions and garlic. Stir in the cumin, smoked paprika, minced chipotle (if using), salt, and black pepper. Cook, stirring, 3–4 minutes to allow flavors to meld and any remaining liquid to evaporate.

Finish the filling

Add the reserved hibiscus cooking liquid (start with 1–2 tbs, add more if needed for moisture) and lime juice. Cook 1 minute, then taste and adjust salt, pepper, or lime. Remove from heat and keep warm.

Quesadilla assembly

Preheat skillet

Heat a large nonstick or cast-iron skillet over medium-low to medium heat. Have tortillas, shredded cheese, and the warm jamaica filling ready.

Assemble quesadillas

Place one tortilla on a work surface. Sprinkle about 1/2 cup shredded cheese over half of the tortilla. Mound about 1/3 cup of the jamaica filling on top of the cheese, then sprinkle another 1/4 cup cheese over the filling (this helps the top tortilla stick). Fold the tortilla over to create a half-moon.

Cook until golden

Add a little butter or oil (about 1/2 tbs) to the preheated skillet. Place the folded quesadilla seam-side down and cook 2–3 minutes until the bottom is golden and crisp. Carefully flip and cook another 2–3 minutes until the cheese is fully melted and the other side is golden. Reduce heat if browning too quickly.

Keep warm and repeat

Transfer finished quesadilla to a cutting board and keep warm tented with foil while you cook remaining quesadillas, adding more butter/oil to the skillet as needed.

Slice and serve

Slice each quesadilla into 3 or 4 wedges. Top with optional crumbled queso fresco, pickled red onions, cilantro, and a dollop of crema or sour cream. Serve with lime wedges on the side.

Optional toppings and garnish

Scatter crumbled queso fresco or cotija and chopped cilantro over the cut quesadillas. Add pickled red onions for brightness. Serve crema or sour cream on the side for dipping and squeeze lime over individual wedges to taste.
