Taco Filling
Prep vegetables
Trim and finely dice the onion and red bell pepper. Cut the zucchini into small half-moons (about 1/4-inch thick). If using fresh corn, remove kernels from the cob.
Cook aromatics
Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the diced onion and cook, stirring, until translucent, about 3–4 minutes. Add the minced garlic and cook 30 seconds until fragrant.
Sauté vegetables
Add the red bell pepper and zucchini to the pan. Cook 5–6 minutes, stirring occasionally, until vegetables are softened and starting to brown.
Add corn and beans
Stir in the corn and black beans. Sprinkle the chili powder, cumin, smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper over the mixture. Cook 3–4 minutes until heated through and spices are fragrant.
Finish filling
Fold in the spinach and cook just until wilted, about 1–2 minutes. Remove from heat and stir in 1 tablespoon fresh lime juice. Taste and adjust seasoning if needed.

Beat eggs
Crack the 4 eggs into a medium bowl. Add 2 tablespoons milk or water, 1/4 teaspoon salt, and a pinch of black pepper. Whisk until combined and slightly frothy.
Cook eggs
Heat 1 tablespoon butter or oil in a nonstick skillet over medium-low. Pour in the beaten eggs. Allow them to sit for about 10–15 seconds, then gently stir with a spatula, pulling cooked edges into the center. Continue until eggs are softly set but still moist, about 2–3 minutes total. Remove from heat (eggs will continue to set slightly).
Assembly & Serve
Build tacos
Lay out tortillas and divide the veggie filling evenly among them (about 2 tablespoons filling per taco). Top each with a portion of the scrambled eggs (about 1/2 egg worth per taco). Sprinkle with shredded cheese while eggs are still warm so it melts slightly.
Add toppings
Top each taco with sliced avocado, a dollop of sour cream or Greek yogurt, a spoonful of salsa or a dash of hot sauce, and a sprinkle of chopped cilantro. Serve with lime wedges to squeeze over the tacos.
Optional serving note
If you like extra heat or texture, add pickled jalapeños, diced tomatoes, or crumbled queso fresco. Leftover filling keeps 3 days refrigerated; reheat gently before using.
