Margarita

Method

Prepare glass

Rim the glass

Run a lime wedge around the rim of a chilled rocks or coupe glass. Spread the coarse salt or Tajín on a small plate and gently dip the rim to coat. Set the glass aside.

Mix the margarita

Fill a cocktail shaker with the ice (about 1 cup). Add 2 oz blanco tequila, 1 oz fresh lime juice, 0.5 oz fresh orange juice or 0.5 oz Cointreau/Triple Sec, and 0.5 tsp agave nectar.

Shake

Secure the shaker and shake vigorously for 10–15 seconds until the exterior of the shaker feels very cold and slightly frosted. This both chills and dilutes the cocktail to the proper balance.

If you prefer a slightly longer, lower-calorie drink, add 1 oz sparkling water to a mixing glass with a few ice cubes and strain the shaken margarita into it (see next step). If you want it undiluted, skip the sparkling water and proceed to strain.

Strain & serve

Double-strain the contents of the shaker into the prepared rimmed glass over fresh ice (rocks) or straight up into the chilled coupe. If using sparkling water, pour the sparkling water into the serving glass first and then gently pour the strained margarita on top to maintain effervescence.

Garnish

Express a lime peel over the drink to release oils, then drop a lime wheel or wedge on the rim or into the drink. Optionally sprinkle 1/4 tsp lime zest on top for added aroma.

Notes

This 'skinny' margarita minimizes added sugar by using only a small amount of agave and fresh juices. Adjust agave to taste (0–1 tsp). Use high-quality blanco tequila and freshly squeezed lime and orange juice for the best flavor.
