Cook the potatoes

Place diced potatoes in a medium saucepan and cover with cold water by 1 inch. Add 1/2 teaspoon salt. Bring to a boil over high heat, then reduce to a simmer and cook until just tender, 8–10 minutes. Drain well and return to the hot pan for 1 minute to evaporate extra moisture.

Sauté aromatics

While potatoes cook, heat 2 tablespoons vegetable oil in a large skillet over medium heat. Add the diced onion and cook until soft and translucent, about 5–7 minutes. Add the minced garlic and cook 30–45 seconds until fragrant.

Combine and season

Add the drained potatoes to the skillet with the onion and garlic. Increase heat to medium-high and gently smash some potato pieces with a spatula so you have a mix of mashed and chunky texture (about 1 minute). Stir in chipotle in adobo (or smoked paprika), ground cumin, chili powder, remaining 1 teaspoon kosher salt, and black pepper. Cook and toss for 2–3 minutes so spices bloom and potatoes take on color.

Finish filling

Remove skillet from heat. Stir in lime juice and chopped cilantro. Taste and adjust seasoning (add up to 1/2 teaspoon more salt if desired). Keep warm while you prepare tortillas and toppings.

Heat a separate dry skillet over medium-high heat. Warm tortillas 20–30 seconds per side until pliable and slightly blistered. Stack and wrap in a clean towel to keep warm.

Divide the potato filling evenly among the 8 tortillas (about 1/2 cup filling per taco). Top each with shredded cheese, a small handful of thinly sliced cabbage, a few pickled jalapeño slices, and a drizzle (or dollop) of sour cream or crema. Add a few cilantro leaves and a squeeze of lime. Finish with hot sauce if using.

For a crisp exterior, heat 2 tablespoons butter or oil in a large skillet over medium-high heat. Working in batches, place assembled tacos seam-side down and cook 1–2 minutes per side until golden and crispy and cheese melts slightly. Transfer to a paper-towel-lined plate and keep warm. This step yields crunchy, folded 'Mr Potato' tacos.
