While potatoes cook, heat 2 tablespoons vegetable oil in a large skillet over medium heat. Add the diced onion and cook until soft and translucent, about 5–7 minutes. Add the minced garlic and cook 30–45 seconds until fragrant.
Combine and season
Add the drained potatoes to the skillet with the onion and garlic. Increase heat to medium-high and gently smash some potato pieces with a spatula so you have a mix of mashed and chunky texture (about 1 minute). Stir in chipotle in adobo (or smoked paprika), ground cumin, chili powder, remaining 1 teaspoon kosher salt, and black pepper. Cook and toss for 2–3 minutes so spices bloom and potatoes take on color.

Warm tortillas
Heat a separate dry skillet over medium-high heat. Warm tortillas 20–30 seconds per side until pliable and slightly blistered. Stack and wrap in a clean towel to keep warm.
Assemble tacos
Divide the potato filling evenly among the 8 tortillas (about 1/2 cup filling per taco). Top each with shredded cheese, a small handful of thinly sliced cabbage, a few pickled jalapeño slices, and a drizzle (or dollop) of sour cream or crema.
