In a medium skillet over medium heat, add the chorizo. Cook for about 5-7 minutes, breaking it apart with a spatula until it is fully cooked and browned. Drain excess fat if necessary.

Add the Hatch green chiles to the skillet with the cooked chorizo. Stir well and cook for an additional 2-3 minutes until the chiles are heated through.

In a large bowl, mix the Monterey Jack cheese and Queso Blanco cheese together until evenly combined.

In an oven-safe dish, combine the cooked chorizo and green chile mixture with the cheese blend. Mix in the lime juice and salt, ensuring everything is evenly distributed.

Place the oven-safe dish in a preheated oven at 350°F (175°C) for about 15-20 minutes, or until the cheese is fully melted and bubbly.

Prepare Tortillas
While the queso fundido is baking, warm the flour tortillas in a skillet over medium heat for about 1-2 minutes on each side or until they are soft and pliable.
