Prepare the Fillings
In a skillet over medium heat, add 1 tablespoon of olive oil. Once heated, add the sliced onions and bell peppers. Sauté for about 5 minutes until they are soft. Add diced chicken and continue cooking for another 2-3 minutes until heated through. Season with cumin, chili powder, salt, and black pepper.

Assemble the Quesadillas
Lay one tortilla on a flat surface. Sprinkle a layer of cheddar and mozzarella cheese on half of the tortilla. Add a portion of the sautéed filling mixture on top of the cheese. Sprinkle another layer of cheese over the filling and fold the tortilla in half.

Grill the Quesadillas
In a clean skillet, heat the remaining tablespoon of olive oil over medium heat. Place the assembled quesadilla in the skillet and cook for about 3-4 minutes on one side until golden brown. Carefully flip and cook for another 3-4 minutes until the other side is golden and the cheese is melted.

Serve
Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with salsa or sour cream on the side.
