Prepare the Raspberry Mixture
In a medium saucepan, combine the fresh raspberries, water, and granulated sugar. Cook over medium heat, stirring occasionally, until the raspberries break down and the mixture becomes syrupy, about 10 minutes.

Strain the Raspberry Mixture
Remove the saucepan from heat and let it cool slightly. Pour the mixture through a fine mesh sieve into a bowl, pressing down on the solids to extract as much liquid as possible. Discard the solids.

Add the freshly squeezed lime juice to the raspberry syrup. If using, stir in lime zest and fresh mint leaves for added flavor.

Pour the raspberry-lime mixture into popsicle molds. Leave a little space at the top as the mixture will expand when frozen.

To remove the popsicles from their molds, run warm water over the outside of the molds for a few seconds. Gently pull on the sticks to remove the pops.
