Method
Preparing Chicken Wings

Season the Wings
In a large bowl, season the chicken wings with salt, black pepper, garlic powder, and paprika. Mix well to ensure even coating.

Marinate the Wings
Pour buttermilk over the seasoned chicken wings. Cover and refrigerate for at least 1 hour or overnight for best results.
Frying the Wings

Prepare the Oil
In a large, deep pot, heat vegetable oil to 350°F (175°C) over medium heat.

Dredge the Wings
Remove the marinated wings from the refrigerator. In a shallow dish, add the all-purpose flour. Dredge each wing in the flour until fully coated, shaking off excess flour.

Fry the Wings
Carefully place the dredged wings in the hot oil, frying in batches to avoid overcrowding. Fry for 8-10 minutes or until golden brown and cooked through. Use a thermometer to ensure internal temperature reaches 165°F (74°C).

Remove the wings from the oil and place them on a paper towel-lined plate to drain excess oil. Allow to cool slightly before serving.

In a small saucepan, melt butter over low heat. Once melted, add Valentina hot sauce and stir to combine. Heat through and set aside.

Cilantro Lime Sauce
In a blender or food processor, combine fresh cilantro, lime juice, sour cream, garlic powder, and salt. Blend until smooth and creamy. Adjust seasoning to taste.

Chipotle Ranch Sauce
In a bowl, mix ranch dressing with chipotle peppers and lime juice until well combined. Adjust the spice level by adding more chipotle peppers if desired.
