Churro Dough Preparation

Prepare the Dough
In a medium saucepan, combine water, unsalted butter, sugar, and salt. Bring to a boil over medium heat. Once boiling, remove from heat and stir in the flour until the mixture forms a ball. Allow to cool slightly.

Add Eggs and Vanilla
Once the dough has cooled enough to handle, beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully incorporated.

Mix the Coating
In a shallow bowl, combine granulated sugar and ground cinnamon. Set aside for later use.
Chocolate Sauce

Make the Chocolate Sauce
In a small saucepan, heat heavy cream over medium heat until just simmering. Remove from heat and add chopped Mexican chocolate. Let sit for a minute, then stir until smooth. Stir in the vanilla extract and set aside.
Frying and Serving

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 375°F (190°C).

Pipe the Dough
Transfer the churro dough to a piping bag fitted with a star tip. Pipe 4 to 6-inch long strips of dough into the hot oil, cutting with scissors.

Fry the Churros
Fry the churros until golden brown, about 2-3 minutes on each side. Remove with a slotted spoon and drain on paper towels.

Serve with Chocolate Sauce
Serve the churros warm with the prepared Mexican chocolate sauce for dipping.
