Churro Preparation

Prepare the Dough
In a medium saucepan, combine water, granulated sugar, unsalted butter, and salt. Bring to a boil over medium heat, stirring until the butter is melted.

Mix in Dry Ingredients
Once boiling, remove the pan from the heat and stir in all-purpose flour, baking powder, and ground cinnamon until a dough forms.

Add Eggs
Let the dough cool for a few minutes, then add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Pipe Churros
Transfer the dough to a piping bag fitted with a star tip. Carefully pipe 6-inch strips of dough into the hot oil, cutting them with scissors.

Fry Until Golden
Fry churros for about 2-3 minutes on each side or until they are golden brown. Remove them from the oil and place on paper towels to drain excess oil.
Coating and Serving

Prepare Cinnamon Sugar
In a shallow dish, combine the granulated sugar and ground cinnamon. Mix well.

Make Chocolate Sauce
In a small saucepan over low heat, combine semi-sweet chocolate chips and heavy cream. Stir until melted and smooth, then remove from heat and stir in vanilla extract.

Serve warm churros with the chocolate sauce for dipping.
